Green Bean Salad

I found this recipe in “Cuisine at Home”. I was looking for a light easy side for our family 4th of July get-together.

Everyone loved it….. even the little people!

2 lbs fresh green beans, trimmed

3 Tbsp. olive oil, divided

1 pkg. cherry tomatoes, sliced

Salt and Pepper

1 clove garlic, grated

30z of prosciutto (couldn’t find prosciutto, used bacon)

8 oz of Mozzarella

1/4 cup fresh lemon juice

3 Tbsp olive oil

Preheat oven to 450

Toss beans with 2 Tbsp oil and season with salt and pepper.  Roast beans in 450-degree oven for 20 minutes

Toss tomatoes and garlic with 1 Tbsp oil, transfer to a baking sheet and roast until tomatoes begin to wrinkle about 10 – 15 minutes.

Combine cooked beans, tomatoes, prosciutto and mozzarella.

Whisk together lemon juice and 3 Tbsp oil, season with salt and pepper, and toss with salad mixture.

Season again if necessary.

Makes about 8 servings.

We changed a few ingredients from the original recipe.  As I stated above I couldn’t find prosciutto so used bacon. I also couldn’t find the listed “Burrata” cheese, a type of mozzarella – so used good ol’ mozzaraella. This recipe was easy to make up and was delicious.
